The Leicester City winger missed last month's fixtures against Andorra and Scotland, but after returning to fitness and form, the player has been recalled to the squad by manager Aidy Boothroyd.
Gray will be available for the friendly fixture against Italy on Thursday 15th November, and the match away to Denmark on November 20th.
22 year old Gray hit the headlines last week, as he helped Leicester City return to their playing duties with a win, after the tragic death of the club chairman Vichai Srivaddhanaprahba.
The winger scored the only goal of an emotional fixture away to Cardiff City, after which he paid tribute to the late club chairman, by revealing a tribute message under his shirt.
To date, Gray has represented England U21's 19 times, scoring 9 goals in the processs.
Young guns Phil Foden, Harvey Barnes and Reiss Nelson also retain their places after impressing manager Aidy Boothroyd with their recent first team performances.
Boss Boothroyd is beginning the preparations for EURO 2019, after England qualified for the U21 edition of the tournament in October.
The manager also spoke about his squad selection after the announcement this week, saying: "It's nice to have Demarai back with us because he's done really well and the competition for places is fantastic now.
Boothroyd continued: "We had Reiss joining us for the first time last month and Harvey Barnes has done a really good job too so I'm really pleased that we've got two players who have come up and shown us they mean business."
The manager concluded: ""It's great for the group because the standard is so high that it improves our training and everything else and you need that when you want to be successful - you need everybody fighting for a place."
